Roasted Garlic Mashed Potatoes

Total Time: 40 mins Preparation Time: 30 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 head garlic
  • 1 tablespoon olive oil
  • 6 butter gold potatoes
  • 1/2 cup butter
  • 1/2 cup heavy cream
  • salt and pepper

Recipe

  • 1 peel off outer layer of the flaky wrapping covering the garlic.
  • 2 drizzle olive oil over garlic and cover with foil.
  • 3 place in oven and roast for 20-30 min at 400 degrees.
  • 4 dice potatoes and boil in salted water unill soft.
  • 5 garlic is done when the pulp is soft and mushy.
  • 6 remove the garlic pulp and add to potatoes.
  • 7 add butter and cream.
  • 8 mash well.
  • 9 season with salt and pepper to taste.
  • 10 tips- add your cream slowly while mashing to prevent to much liquid in the potatoes.
