Roasted Garlic Mashed Potatoes

Ingredients

- 3 heads garlic
- 3 tablespoons olive oil
- 2 lbs peeled and diced potatoes
- 1/2 cup butter
- milk
- salt and pepper
Recipe
- 1 preheat oven to 450 degrees.
- 2 place garlic in pan and brush with olive oil and salt and pepper.
- 3 roast for 35 minute until golden brown.
- 4 let cool, then squeeze garlic from head.
