Roasted Garlic Parmesan Mashed Potatoes

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 6 idaho potatoes
  • 1 pint heavy cream
  • 1/2 lb parmesan cheese
  • 1 bulb of garlic
  • 1/2 cup butter
  • 1 teaspoon olive oil

Recipe

  • 1 peel and quarter the potatoes.
  • 2 place potatoes in medium pot with cold water on high heat.
  • 3 let boil until fork tender, drain, and return to pot.
  • 4 grate the parmesan cheese.
  • 5 cut the top of garlic bulb, cover with teaspoon of olive oil, wrap in tin foil, roast 450 degrees until soft.
  • 6 pour the cream and add the butter to the potatoes and mash until smooth.
  • 7 squeeze the garlic cloves out of the skin.
  • 8 add the cheese, garlic, salt and pepper to the potatoes.
  • 9 whip until well combined.
