Penne With Blue Cheese, Roasted Red Onions And Walnuts

Ingredients

- 3 large red onions, halved
- 6 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- salt and pepper
- 12 ounces penne
- 4 ounces gorgonzola or 4 ounces blue cheese, crumbled
- 3 tablespoons coarsely chopped fresh flat leaf parsley
- 1/2 cup walnut pieces, toasted
- 5 tablespoons olive oil
Recipe
- 1 preheat oven to 375 degrees.
- 2 cut each onion half into crescent shaped slices, about 1/4 " thick . toss in roasting pan with the olive oil, vinegar, salt and pepper.
- 3 roast for 30 - 35 minutes shaking pan from time to time.
- 4 the onions should be tender and slightly charred.
- 5 cook pasta, drain, and return to saucepan.
- 6 add onions, cheese, parsley, walnuts and olive oil (extra virgin).
