Penne With Blue Cheese, Roasted Red Onions And Walnuts

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • Servings: 4
  • 3 large red onions, halved
  • 6 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • salt and pepper
  • 12 ounces penne
  • 4 ounces gorgonzola or 4 ounces blue cheese, crumbled
  • 3 tablespoons coarsely chopped fresh flat leaf parsley
  • 1/2 cup walnut pieces, toasted
  • 5 tablespoons olive oil

Recipe

  • 1 preheat oven to 375 degrees.
  • 2 cut each onion half into crescent shaped slices, about 1/4 " thick . toss in roasting pan with the olive oil, vinegar, salt and pepper.
  • 3 roast for 30 - 35 minutes shaking pan from time to time.
  • 4 the onions should be tender and slightly charred.
  • 5 cook pasta, drain, and return to saucepan.
  • 6 add onions, cheese, parsley, walnuts and olive oil (extra virgin).
