Quinoa Salad With Mangoes And Curry Dressing

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 1/3 cups quinoa, rinsed
  • 2 large mangoes, cubed
  • 1 jalapeno chile, seeded and diced
  • 3 green onions, sliced
  • 1/2 cup curry vinaigrette
  • 1/3 cup roasted almonds

Recipe

  • 1 bring 3 cups of water to boil and add 1/2 tsp of salt and the quinoa, lower the heat, cover and simmer until the quinoa is tender (12-15 minutes). drain.
  • 2 toss all of the ingredients together with the drained quinoa except for the almonds, add those just before serving.
  • 3 enjoy!
