Lentil And Red Pepper Soup

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • Servings: 12
  • 12 ounces hot italian sausage
  • 1 teaspoon olive oil
  • 1 1/2 cups chopped onions
  • 1 1/2 cups chopped celery
  • 1 1/2 cups chopped carrots
  • 2 garlic cloves, diced
  • 12 ounces roasted red peppers, drained and chopped
  • 1 1/2 cups lentils
  • 8 cups chicken broth
  • 14 1/2 ounces diced tomatoes
  • 2 bay leaves

Recipe

  • 1 cook sausage (casing removed) in olive oil in large pan over medium high heat.
  • 2 add onions, celery, and carrots and cook until tender, add garlic.
  • 3 add remaining ingredients bring to boil, reduce heat, cover, and simmer for 25 minutes or until lentils are tender.
