Lentil And Red Pepper Soup

Ingredients

- 12 ounces hot italian sausage
- 1 teaspoon olive oil
- 1 1/2 cups chopped onions
- 1 1/2 cups chopped celery
- 1 1/2 cups chopped carrots
- 2 garlic cloves, diced
- 12 ounces roasted red peppers, drained and chopped
- 1 1/2 cups lentils
- 8 cups chicken broth
- 14 1/2 ounces diced tomatoes
- 2 bay leaves
Recipe
- 1 cook sausage (casing removed) in olive oil in large pan over medium high heat.
- 2 add onions, celery, and carrots and cook until tender, add garlic.
- 3 add remaining ingredients bring to boil, reduce heat, cover, and simmer for 25 minutes or until lentils are tender.
