Roasted Garlic Smashed Potatoes

Total Time: 1 hr 40 mins Preparation Time: 15 mins Cook Time: 1 hr 25 mins

Ingredients

  • Servings: 6
  • 2 small bulbs of garlic
  • 1 tablespoon olive oil
  • 4 lbs red potatoes, peeled & quartered
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup sour cream
  • 1/2 cup butter
  • 1/4 cup milk
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • chopped fresh chives

Recipe

  • 1 cut off pointed end of garlic bulb.
  • 2 place garlic bulb on a piece of aluminum foil; drizzle with oil.
  • 3 fold foil to seal.
  • 4 bake at 350 degrees for 1 hour; cool.
  • 5 squeeze pulp from garlic, set aside.
  • 6 cook potatoes in a dutch oven, in boiling salted water to cover 20 to 25 min or until tender.
  • 7 drain and place in a large bowl.
  • 8 mash potatoes with roasted garlic pulp, cream cheese, and next 5 ingredients in a bowl until smooth.
  • 9 garnish, if desired.
