Roasted Garlic Smashed Potatoes

Ingredients

- 2 small bulbs of garlic
- 1 tablespoon olive oil
- 4 lbs red potatoes, peeled & quartered
- 1 (8 ounce) package cream cheese, softened
- 1 cup sour cream
- 1/2 cup butter
- 1/4 cup milk
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- chopped fresh chives
Recipe
- 1 cut off pointed end of garlic bulb.
- 2 place garlic bulb on a piece of aluminum foil; drizzle with oil.
- 3 fold foil to seal.
- 4 bake at 350 degrees for 1 hour; cool.
- 5 squeeze pulp from garlic, set aside.
- 6 cook potatoes in a dutch oven, in boiling salted water to cover 20 to 25 min or until tender.
- 7 drain and place in a large bowl.
- 8 mash potatoes with roasted garlic pulp, cream cheese, and next 5 ingredients in a bowl until smooth.
- 9 garnish, if desired.
