Pea And Sun Dried Tomato Pesto

Ingredients

- 2 cups frozen peas, thawed
- 1/2 cup grated parmesan cheese (fresh is better than dried)
- 1 lemon, juice of
- 2 tablespoons chopped sun-dried tomatoes
- 1 tablespoon chopped garlic
- 1 pinch salt
- 1 pinch pepper
- 1/4 cup olive oil
- 1/4 cup chopped fire roasted red pepper (from the jar)
Recipe
- 1 add all the ingredients, except for the olive oil and red bell peppers, to a food processor and blend. add the olive oil last. taste as you go to adjust ingredients based on your flavor preference.
- 2 place on top of crostini or crackers, and top with chopped red bell peppers.
