- 4 medium sweet potatoes, cut into 2-inch pieces
- 2 medium red onions, cut in to 1-inch pieces
- 2 tablespoons extra virgin olive oil
- 1 teaspoon lemon pepper
- 1/2 teaspoon salt
Recipe
- 1 preheat oven to 425.
- 2 combine all ingredients in baking dish.
- 3 toss to coat the veggies
- 4 bake for 35 minutes, until the sweet potatoes are tender and onions are soft.
