Herb Roasted Rack Of Lamb

Ingredients

- 3 lbs lamb roast (about 6 ribs in a lamb loin rib roast rack)
- 3 tablespoons dijon mustard
- 1 medium onion, minced
- 3 garlic cloves, minced
- 2 tablespoons paprika
- 1 tablespoon dried basil
- 1 tablespoon salt
- 1 tablespoon black peppercorns, crushed
- 2 teaspoons dried thyme
Recipe
- 1 place lamb in a shallow pan; rub with mustard.
- 2 combine remaining ingredients in a shallow dish and roll lamb in mixture to coat thoroughly.
- 3 roast lamb at 325°f (160°c) for about 1 3/4 hours or until meat thermometer registers 160°f (70°c).
- 4 remove from oven; tent with foil and let stand 5 to 10 minutes before slicing.
