Herb Roasted Rack Of Lamb

Ingredients

  • Servings: 8
  • 3 lbs lamb roast (about 6 ribs in a lamb loin rib roast rack)
  • 3 tablespoons dijon mustard
  • 1 medium onion, minced
  • 3 garlic cloves, minced
  • 2 tablespoons paprika
  • 1 tablespoon dried basil
  • 1 tablespoon salt
  • 1 tablespoon black peppercorns, crushed
  • 2 teaspoons dried thyme

Recipe

  • 1 place lamb in a shallow pan; rub with mustard.
  • 2 combine remaining ingredients in a shallow dish and roll lamb in mixture to coat thoroughly.
  • 3 roast lamb at 325°f (160°c) for about 1 3/4 hours or until meat thermometer registers 160°f (70°c).
  • 4 remove from oven; tent with foil and let stand 5 to 10 minutes before slicing.
