Gazpacho

Ingredients

  • Servings: 4
  • 4 ripe tomatoes, peeled,seeded & chopped
  • 1 red bell pepper, roasted,peeled & chopped
  • 1 yellow bell pepper, roasted,peeled & chopped
  • 1 orange bell pepper, roasted,peeled & chopped
  • 1 large cucumber, peeled,seeded & chopped
  • 4 green onions, chopped
  • 1 small red onion, chopped
  • 2 stalks celery, chopped
  • 1 clove garlic, minced
  • 3 tablespoons minced fresh cilantro
  • 3 tablespoons minced fresh parsley
  • 1 teaspoon extra virgin olive oil
  • 2 teaspoons balsamic vinegar
  • 1 cup vegetable broth
  • 1/2 teaspoon celery salt (more if you think it needs it)
  • 4 lime wedges

Recipe

  • 1 pulse everything in food processor to puree.
  • 2 serve with a wedge of lime squeezed into it.
