Greek Roasted Chicken

Total Time: 1 hr 35 mins Preparation Time: 5 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 8
  • 3 1/2 lbs chicken
  • 2 whole lemons
  • 1/2 cup greek salad dressing
  • salt and pepper

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 remove giblets from chicken; wash and pat dry with paper towels.
  • 3 salt and pepper skin and cavity of chicken to your taste.
  • 4 place chicken in a 13 x 9 inch baking pan.
  • 5 take one lemon and rub on counter top back and forth with your hand to loosen lemon juice.
  • 6 cut lemon in half.
  • 7 take one half of a lemon and squeeze the juice into a small glass mixing bowl; add 1/2 cup greek vinaigrette dressing and blend.
  • 8 place squeezed lemon and other three lemon halves into cavity of chicken.
  • 9 slowly pour dressing mixture over chicken.
  • 10 bake for 1 1/2 at 350 degrees or until juices run clear.
  • 11 baste periodically.
