Roast Potatoes

Total Time: 45 mins Preparation Time: 30 mins Cook Time: 15 mins

Ingredients

  • 4 potatoes
  • 3 -5 sprigs fresh coriander leaves
  • salt
  • 1 teaspoon black peppercorns, crushed
  • 1 tablespoon lemon juice

Recipe

  • 1 scrub and wash potatoes.
  • 2 cut into quarters without peeling them.
  • 3 clean, wash and chop corriander leaves.
  • 4 now, neatly place the potato quarters on a 12 inch square piece aluminium foil.
  • 5 sprinkle salt, crushed peppercorns, corriander leaves and lemon juice.
  • 6 wrap the foil properly around the potatoes.
  • 7 double wrap, if necessary.
  • 8 put it on live charcoals in a barbecue.
  • 9 also put some live charcoals on top of the packet.
  • 10 cook for 15 minutes.
  • 11 serve hot with roasted corn.
  • 12 enjoy!
