Low Fat Roasted Red Pepper Dressing

Ingredients

- 1 sweet red pepper
- 4 garlic cloves
- 1/4 cup balsamic vinegar
- 1/2 teaspoon pepper
- salt
- 2 tablespoons fresh basil or 2 tablespoons parsley, chopped
- 1 tablespoon olive oil
- 2 tablespoons water
- parmesan cheese (optional)
Recipe
- 1 roast the pepper and let sit covered for 10 - 15 minutes.
- 2 remove and discard the core and seeds.
- 3 remove skin and charred bitties.
- 4 puree pepper and garlic in food processor.
- 5 blend in vinegar, salt and pepper, basil and oil.
- 6 whisk in water.
