Low Fat Roasted Red Pepper Dressing

Total Time: 30 mins Preparation Time: 30 mins

Ingredients

  • Servings: 4
  • 1 sweet red pepper
  • 4 garlic cloves
  • 1/4 cup balsamic vinegar
  • 1/2 teaspoon pepper
  • salt
  • 2 tablespoons fresh basil or 2 tablespoons parsley, chopped
  • 1 tablespoon olive oil
  • 2 tablespoons water
  • parmesan cheese (optional)

Recipe

  • 1 roast the pepper and let sit covered for 10 - 15 minutes.
  • 2 remove and discard the core and seeds.
  • 3 remove skin and charred bitties.
  • 4 puree pepper and garlic in food processor.
  • 5 blend in vinegar, salt and pepper, basil and oil.
  • 6 whisk in water.
