Peanut Rice

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 cup basmati rice
  • 2 1/4 cups water
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground turmeric
  • 1/2 cup frozen baby peas, thawed
  • 1/2 cup dry roasted peanuts, chopped
  • 1/4 cup green onion, sliced (green and parts)

Recipe

  • 1 mix the rice, water, salt, and turmeric in a pot, and bring to a boil. cover, reduce heat to low, and simmer 20 minutes.
  • 2 stir the onions, peas and peanuts into the cooked rice, and serve.
