Roasted Aubergine (eggplant) Dip

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 large aubergines
  • 1 small onion, chopped
  • 2 garlic cloves, chopped
  • 4 tablespoons olive oil
  • 2 tablespoons lemon juice

Recipe

  • 1 thread aubergines onto a skewer and grill under a medium grill for 10 mins, turn and grill for a further 10 minutes
  • 2 allow aubergines to cool then peel and chop.
  • 3 place all ingredients in a blender and process until smooth.
