Ingredients

- 1 -3 1/2 lb chicken
- 4 lemons
- 8 garlic cloves, peeled
- 16 sprigs rosemary
- 1/2 teaspoon red pepper flakes
- salt and pepper
Recipe
- 1 cut chicken in half lenghtwise.
- 2 place in large oven proof dish.
- 3 squeeze juice from the lemons over the chicken.
- 4 add the lemon to the dish along with garlic, rosemary, red pepper, salt and pepper.
- 5 marinate for 2 hours, turning chicken a few times.
- 6 preheat oven to 400 degrees.
- 7 roast chicken for 45 minutes.
- 8 can broil at the end for darker, crisp skin.
- 9 cut into serving pieces.
