Mouth-watering Meatloaf

Ingredients

- 2 large eggs
- 1 teaspoon dry mustard
- 1/2 cup 1% low-fat milk
- 4 slices bread, crumbled
- 2 1/2 lbs ground beef
- 1 large onion, minced
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup minced celery
- 1/4 cup parsley, chopped
- 1/2 cup ketchup
- 2 tablespoons brown sugar
- 3 slices american cheese
- 1/4 teaspoon dry mustard
Recipe
- 1 preheat oven to 350 degrees.
- 2 line roasting pan with aluminum foil; set aside.
- 3 in large bowl whisk eggs with 1 teaspoons.
- 4 mustard, 3/4 teaspoons.
- 5 salt and 1/4 teaspoons.
- 6 pepper until blended.
- 7 stir in milk and bread crumbs.
- 8 let stand 5 minutes.
- 9 add ground beef, onion, celery, and parsley.
- 10 with hands, mix lightly until well blended.
- 11 turn meat into prepared pan.
- 12 moisten hands with water, shape into 8x5 inch loaf.
- 13 bake 1 hour and 15 minutes.
- 14 in small bowl mix glaze ingredients until blended.
- 15 spread over top of meat loaf.
- 16 bake 15 minutes longer.
- 17 cut cheese in half crosswise into triangle.
- 18 arrange over top of glaze.
- 19 serve with roasted potatoes.
