' End Of Summer' Rice Salad With Tuna

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • 2 1/2 cups cold basmati rice or 2 1/2 cups rice
  • 1 (16 ounce) can garbanzo beans, drained and rinsed
  • 3 roasted red peppers or 3 yellow bell peppers, chopped
  • 1/2 cup chopped fresh basil
  • 1/2 cup chopped red onion
  • 2 garlic cloves, crushed
  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • 1/2 teaspoon salt
  • 1/2 cup crumbled feta cheese
  • 8 ounces cooked fresh tuna, chunked
  • 2 cups fresh baby spinach leaves

Recipe

  • 1 combine all ingredients in a bowl; toss well.
  • 2 let stand at least 1 hour.
  • 3 serve at room temperature.
