' End Of Summer' Rice Salad With Tuna

Ingredients
- 2 1/2 cups cold basmati rice or 2 1/2 cups rice
- 1 (16 ounce) can garbanzo beans, drained and rinsed
- 3 roasted red peppers or 3 yellow bell peppers, chopped
- 1/2 cup chopped fresh basil
- 1/2 cup chopped red onion
- 2 garlic cloves, crushed
- 1/4 cup extra virgin olive oil
- 1/4 cup fresh lemon juice
- 1/2 teaspoon salt
- 1/2 cup crumbled feta cheese
- 8 ounces cooked fresh tuna, chunked
- 2 cups fresh baby spinach leaves
Recipe
- 1 combine all ingredients in a bowl; toss well.
- 2 let stand at least 1 hour.
- 3 serve at room temperature.
