Chakchouka

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 medium onion, thinly sliced
  • 2 garlic cloves, minced
  • 2 tablespoons extra virgin olive oil
  • 4 green new mexican chilies, roasted, peeled, stems removed, cut in strips
  • 1/4 teaspoon ground cayenne pepper
  • 3 tomatoes, peeled and diced
  • 2 teaspoons vinegar
  • 1 teaspoon ground cumin
  • 4 eggs

Recipe

  • 1 saute the onion and garlic in the olive oil until soft.
  • 2 add all the remaining ingredients, except the eggs, and simmer for a minute.
  • 3 make 4 indentations in the mixture and carefully break an egg into each one.
  • 4 cover and cook over a low heat until the eggs are set.
