Ginger Roasted Tofu

Ingredients

  • Servings: 4
  • 375 g firm tofu, drained
  • 2 tablespoons pineapple juice (fresh if possible)
  • 3 teaspoons grated ginger
  • 2 garlic cloves, crushed
  • 2 tablespoons tamaris soy sauce
  • 2 tablespoons cold-pressed sesame oil
  • 2 tablespoons honey
  • 1/4 teaspoon fresh ground pepper
  • 4 spring onions, thinly sliced

Recipe

  • 1 first drain and wrap tofu. you need to get it very dry.
  • 2 cut the tofu in quarters before wrapping.
  • 3 prepare the marinade by combining pineapple juice, ginger, garlic, tamari, sesame oil, honey, pepper and half the spring onions in a bowl.
  • 4 when tofu is ready unwrap and place in a flat dish and cover with the marinade.
  • 5 allow to marinate as long as possible. 30 minutes minimum.
  • 6 drain off some of the marinade and place in hot oven (200c/400f) for 20 minutes.
  • 7 remove and serve immediately garnished with spring onions.
