Quinoa With Roasted Yello Pepper Sauce

Ingredients

- 1 yellow bell pepper
- 1 tablespoon olive oil
- 1/2 onion
- 3 garlic cloves, crushed
- 1 1/3 cups chicken broth
- salt and pepper
- 1 cup quinoa, rinsed and toasted
Recipe
- 1 preheat oven to 350 degrees.
- 2 roast yellow pepper and peel the blistered skin.
- 3 saute the onions in olive oil until translucent.
- 4 put the pepper, onion, and garlic in the blender with the broth.
- 5 salt and pepper to taste.
- 6 blend until smooth.
- 7 put the quinoa into a casserole dish, pour the pepper sauce over it; mix well.
- 8 tightly cover with lid or foil.
- 9 bake for 45 minutes.
