French Roasted Potatoes

- 12 small red potatoes, quartered
- 2 garlic cloves, coarsely chopped
- 1/3 cup dijon mustard
- 1/4 cup butter, melted
- 1/8 cup fresh parsley, chopped
Recipe
- 1 preheat oven to 350 degrees f.
- 2 place potatoes and garlic in a lightly greased roasting pan; cover tightly with foil.
- 3 bake for 45-60 minutes or until potatoes are just fork-tender.
- 4 in a medium bowl, blend mustard, butter and parsley; toss with hot potatoes.
- 5 bake uncovered for 15 more minutes.
- 6 serve immediately.
