French Roasted Potatoes

Total Time: 1 hr 30 mins Preparation Time: 15 mins Cook Time: 1 hr 15 mins

Ingredients

  • Servings: 6
  • 12 small red potatoes, quartered
  • 2 garlic cloves, coarsely chopped
  • 1/3 cup dijon mustard
  • 1/4 cup butter, melted
  • 1/8 cup fresh parsley, chopped

Recipe

  • 1 preheat oven to 350 degrees f.
  • 2 place potatoes and garlic in a lightly greased roasting pan; cover tightly with foil.
  • 3 bake for 45-60 minutes or until potatoes are just fork-tender.
  • 4 in a medium bowl, blend mustard, butter and parsley; toss with hot potatoes.
  • 5 bake uncovered for 15 more minutes.
  • 6 serve immediately.
