Crustless Mini Quinoa Quiches

Ingredients
- 2 garlic cloves, chopped
- 1/4 teaspoon sea salt
- 1/8 teaspoon pepper
- 4 large eggs
- 1 cup cottage cheese
- 1 cup cooked quinoa, cooled
- 2/3 cup roasted red pepper, chopped
- 1/4 cup fresh basil, chopped
- 1/4 cup grated parmesan cheese
Recipe
- 1 preheat oven to 350. spray mini muffin tins with cooking spray.
- 2 in blender, combine garlic, salt, pepper, eggs and cottage cheese until smooth.
- 3 transfer to a bowl and stir in quinoa, roasted peppers, basil and parmesan.
- 4 divide quinoa mixture among prepared muffin tins.
- 5 bake 18-23 minutes or until tops are golden.
