Millet Patties

Ingredients
- 3 1/2 cups millet, cooked
- 1 stalk celery, diced
- 2 green onions, diced
- 1 small carrot, diced
- 1 tablespoon black sesame seed
- 1 roasted red pepper, diced
- 1 garlic clove, minced
- 1 teaspoon kosher salt
- 1 teaspoon ground cumin
- 2 eggs
- 2 tablespoons oil
- 2 cups whole wheat breadcrumbs, divided
Recipe
- 1 place 3/4 cup raw millet in a saucepan with 2 cups of water (or use a rice cooker).
- 2 simmer until water is absorbed, fluff and allow to cool.
- 3 add all ingredients and 1/2 cup breadcrumbs to the millet and mix.
- 4 form into patties and press into remaining breadcrumbs to coat.
- 5 place on parchment paper or silpat on a baking sheet.
- 6 cook in 400 degree oven for 20-25 minutes until crisp.
- 7 serve with cashew gravy (cashew gravy).
