Millet Patties

Total Time: 1 hr 5 mins Preparation Time: 15 mins Cook Time: 50 mins

Ingredients

  • 3 1/2 cups millet, cooked
  • 1 stalk celery, diced
  • 2 green onions, diced
  • 1 small carrot, diced
  • 1 tablespoon black sesame seed
  • 1 roasted red pepper, diced
  • 1 garlic clove, minced
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cumin
  • 2 eggs
  • 2 tablespoons oil
  • 2 cups whole wheat breadcrumbs, divided

Recipe

  • 1 place 3/4 cup raw millet in a saucepan with 2 cups of water (or use a rice cooker).
  • 2 simmer until water is absorbed, fluff and allow to cool.
  • 3 add all ingredients and 1/2 cup breadcrumbs to the millet and mix.
  • 4 form into patties and press into remaining breadcrumbs to coat.
  • 5 place on parchment paper or silpat on a baking sheet.
  • 6 cook in 400 degree oven for 20-25 minutes until crisp.
  • 7 serve with cashew gravy (cashew gravy).
