Leftover Potato Cakes (irish Style)

Ingredients
- 2 cups leftover mashed potatoes
- 1 egg
- 1 -2 cup plain flour
- 1 pinch salt and pepper
- 3 -4 cloves roasted garlic (optional) or 1 cup grated cheese (optional) or 1 cup grated carrot (optional)
Recipe
- 1 preheat oven to 180 degrees celsious.
- 2 with a wooden spoon combine potato, egg and seasoning.
- 3 add flour a little at a time until mixture forms a soft non-sticky dough.
- 4 flour work surface and roll out dough till 1-2cm thick.
- 5 cut into pieces about the size of your palm and place on a floured baking sheet.
- 6 cook for 10-15mins until dough starts to brown around edges. should be still soft inside.
- 7 serve with butter and salt.
