Leftover Potato Cakes (irish Style)

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • 2 cups leftover mashed potatoes
  • 1 egg
  • 1 -2 cup plain flour
  • 1 pinch salt and pepper
  • 3 -4 cloves roasted garlic (optional) or 1 cup grated cheese (optional) or 1 cup grated carrot (optional)

Recipe

  • 1 preheat oven to 180 degrees celsious.
  • 2 with a wooden spoon combine potato, egg and seasoning.
  • 3 add flour a little at a time until mixture forms a soft non-sticky dough.
  • 4 flour work surface and roll out dough till 1-2cm thick.
  • 5 cut into pieces about the size of your palm and place on a floured baking sheet.
  • 6 cook for 10-15mins until dough starts to brown around edges. should be still soft inside.
  • 7 serve with butter and salt.
