Quinoa Pilaf (chile)

Ingredients
- Servings: 4
- 1/4 teaspoon saffron
- 500 ml chicken broth
- 1 cup quinoa
- 1 onion, chopped
- 1 tablespoon olive oil
- 2 teaspoons garlic
- 1 teaspoon cumin
- 1 capsicum, roasted, peeled, diced
- 1 bay leaf
- salt
- pepper
- 3 tablespoons cilantro, chopped
Recipe
- 1 rince quinoa, saute onion in oil until softened. add garlic and cumin. saute 5 minutes.
- 2 add quinoa, broth, saffron, red pepper, bay leaf, salt and pepper boil, reduce heat, cover & simmer 15 minutes.
- 3 let stand 5 minutes. stir in cilantro.
