Parmesan Dijon Roasted Chicken Breasts

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 tablespoon dijon mustard
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon chopped fresh oregano (or 1/4 t. dried)
  • 1/2 cup chopped fresh parsley
  • 4 (6 ounce) boneless skinless chicken breast halves
  • salt
  • fresh ground black pepper
  • 2/3 cup freshly grated parmesan cheese

Recipe

  • 1 preheat the oven to 425 degrees.
  • 2 in a small bowl, combine the mustard, oil, oregano, and parsley.
  • 3 season the chicken with salt and pepper and then brush all over with the mustard mixture.
  • 4 place the chicken breasts upside down on a rimmed baking sheet.
  • 5 sprinkle evenly with half of the parmesan.
  • 6 turn the chicken over and coat with the remaining cheese, pressing lightly to adhere.
  • 7 bake for 20 minutes, or until golden and cooked through.
  • 8 remove from the oven and let cool for 5 minutes before serving.
