Fresh Tomato Olive Sauce

Ingredients
- 1 1/2 lbs plum tomatoes, chopped
- 12 kalamata olives, pitted and sliced
- 1/2 cup extra virgin olive oil
- 1/2 cup roasted red pepper, sliced (from a jar)
- 1/4 cup red onion, chopped
- 3 garlic cloves, minced
- 3 tablespoons capers, rinsed and chopped
- 2 tablespoons lemon juice
- 1/2 lemon, zest of
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh oregano, chopped
- 3 tablespoons fresh basil, chiffonade
- 1/2 teaspoon dried red pepper
- salt and pepper
Recipe
- 1 combine all ingredients in a bowl and let it sit at room temperature 1-2 hrs for flavors to blend.
