Fresh Tomato Olive Sauce

Ingredients

  • 1 1/2 lbs plum tomatoes, chopped
  • 12 kalamata olives, pitted and sliced
  • 1/2 cup extra virgin olive oil
  • 1/2 cup roasted red pepper, sliced (from a jar)
  • 1/4 cup red onion, chopped
  • 3 garlic cloves, minced
  • 3 tablespoons capers, rinsed and chopped
  • 2 tablespoons lemon juice
  • 1/2 lemon, zest of
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh oregano, chopped
  • 3 tablespoons fresh basil, chiffonade
  • 1/2 teaspoon dried red pepper
  • salt and pepper

Recipe

  • 1 combine all ingredients in a bowl and let it sit at room temperature 1-2 hrs for flavors to blend.
