Pineapple Waldorf Salad

Ingredients

  • Servings: 15
  • 1 (20 ounce) can pineapple tidbits
  • 6 cups chopped apples
  • 1 1/2 cups chopped celery
  • 1/2 cup raisins
  • 1/4 cup dry roasted sunflower seeds
  • 1/2 cup low-fat mayonnaise
  • 1/2 cup plain fat-free yogurt
  • 1/4 cup sugar

Recipe

  • 1 drain pineapple, reserving 1/2 cup of the juice.
  • 2 in a large bowl, combine the pineapple, apples, celery, raisins and sunflower seeds.
  • 3 in a separate bowl, mix the mayonnaise, yogurt, sugar and pineapple juice.
  • 4 add to fruit mixture and toss to coat.
  • 5 refrigerate until ready to serve.
