Pasta With Oven Roasted Tomato Sauce

Ingredients

- 12 plum tomatoes
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 6 garlic cloves, minced
- 1/2 cup olive oil
- 1/2 cup chopped fresh parsley
- 1/2 cup chopped fresh basil
- 1/4 lb rotini pasta or 1/4 lb fusilli
- freshly grated parmesan cheese
Recipe
- 1 cut tomatoes in half lengthwise.
- 2 place cut side up in a 9 x 13 baking pan.
- 3 sprinkle with salt & pepper.
- 4 in a small bowl combine garlic,1/4 cup olive oil, 1/4 cup basil and 1/4 cup parsley.
- 5 spread over tomatoes.
- 6 bake in preheated 425 oven about 70 minutes until tops are slightly charred.
- 7 cool 15 minutes.
- 8 squeeze pulp from tomatoes into a bowl.
- 9 discard skins.
- 10 coarsely chop pulp.
- 11 stir in remaining olive oil, parsley and basil.
- 12 meanwhile cook pasta in boiling salted water about 8 minutes, or until tender.
- 13 toss with sauce.
- 14 sprinkle with parmesan.
