Pasta With Oven Roasted Tomato Sauce

Total Time: 1 hr 30 mins Preparation Time: 20 mins Cook Time: 1 hr 10 mins

Ingredients

  • Servings: 4
  • 12 plum tomatoes
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 6 garlic cloves, minced
  • 1/2 cup olive oil
  • 1/2 cup chopped fresh parsley
  • 1/2 cup chopped fresh basil
  • 1/4 lb rotini pasta or 1/4 lb fusilli
  • freshly grated parmesan cheese

Recipe

  • 1 cut tomatoes in half lengthwise.
  • 2 place cut side up in a 9 x 13 baking pan.
  • 3 sprinkle with salt & pepper.
  • 4 in a small bowl combine garlic,1/4 cup olive oil, 1/4 cup basil and 1/4 cup parsley.
  • 5 spread over tomatoes.
  • 6 bake in preheated 425 oven about 70 minutes until tops are slightly charred.
  • 7 cool 15 minutes.
  • 8 squeeze pulp from tomatoes into a bowl.
  • 9 discard skins.
  • 10 coarsely chop pulp.
  • 11 stir in remaining olive oil, parsley and basil.
  • 12 meanwhile cook pasta in boiling salted water about 8 minutes, or until tender.
  • 13 toss with sauce.
  • 14 sprinkle with parmesan.
