Macadamia Pesto

Ingredients

  • Servings: 4
  • 1/2 cup fresh rocket (arugula leaves)
  • 1/2 cup fresh basil
  • 1/2 cup roasted macadamia nuts
  • 2 tablespoons parmesan cheese, freshly grated
  • 1/4 cup parsley
  • 1/2 cup light olive oil (can substitute in some macadamia nut oil if desired)
  • salt, to taste

Recipe

  • 1 blend all ingredients until desired consistency for pesto. salt to taste.
  • 2 serve as a topping over a light fish or pan-fried chicken breasts.
