Individual Rum & Eggnog Cakes

Ingredients
- Servings: 8
- 1/2 cup walnuts, finely chopped and roasted
- 18 ounces yellow cake mix
- 1 cup eggnog, cold
- 1/4 cup oil
- 3 large eggs
- 2 tablespoons rum
- 1/4 teaspoon nutmeg
- 1/4 cup rum
Recipe
- 1 generously grease and flour 12 individual or 1 10" bundt pan.
- 2 sprinkle nuts into bottom.
- 3 heat oven to 350 for individual bundts/325 for 10" pan.
- 4 in a large bowl mix, cake mix, eggnog, oil, eggs, rum & nutmeg. beat 2 minutes.
- 5 pour into prepared pans.
- 6 bake 20 minutes individual bundts and 1 hour for 10" pan.
- 7 cool and remove.
- 8 optional: prick cake with toothpick and using a pastry brush, brush on rum. continue over the course of and hour. let sit for several hours or overnight.
