Individual Rum & Eggnog Cakes

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 8
  • 1/2 cup walnuts, finely chopped and roasted
  • 18 ounces yellow cake mix
  • 1 cup eggnog, cold
  • 1/4 cup oil
  • 3 large eggs
  • 2 tablespoons rum
  • 1/4 teaspoon nutmeg
  • 1/4 cup rum

Recipe

  • 1 generously grease and flour 12 individual or 1 10" bundt pan.
  • 2 sprinkle nuts into bottom.
  • 3 heat oven to 350 for individual bundts/325 for 10" pan.
  • 4 in a large bowl mix, cake mix, eggnog, oil, eggs, rum & nutmeg. beat 2 minutes.
  • 5 pour into prepared pans.
  • 6 bake 20 minutes individual bundts and 1 hour for 10" pan.
  • 7 cool and remove.
  • 8 optional: prick cake with toothpick and using a pastry brush, brush on rum. continue over the course of and hour. let sit for several hours or overnight.
