Free-style Lamb Chops

Ingredients

  • Servings: 2
  • 4 fast-fry boneless lamb loin chops
  • 1/2 teaspoon ground black pepper
  • 1/2 cup crumbled feta cheese
  • 1/2 bell pepper, roasted and thinly sliced (or1/4 cup bottled roasted peppers)
  • 1/4 cup black bell pepper, pitted and roughly chopped (about 8)
  • 8 -10 basil leaves, shredded
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon chopped garlic
  • 1 tablespoon canola oil or 1 tablespoon other vegetable oil

Recipe

  • 1 preheat oven to 325°f season lamb chops with pepper and set aside.
  • 2 in a mixing bowl, combine feta cheese, roasted red peppers, black olives, basil, olive oil and garlic. toss to mix.
  • 3 in a large oven-proof skillet over medium-high heat, heat canola oil; reduce heat to medium and add lamb chops. fry chops for 30 seconds on each side, just to brown.
  • 4 pile feta mixture evenly over 4 chops, covering them entirely. if you don't have an oven-proof skillet, place chops on a baking sheet. place chops in oven and cook for 5 minutes or until lamb is just cooked with a hint of pink inside.
