Fiesta Chicken Torte

Total Time: 1 hr 20 mins Preparation Time: 15 mins Cook Time: 1 hr 5 mins

Ingredients

  • 2 teaspoons cooking oil
  • 1 lb ground chicken
  • 1/2 cup onion, chopped
  • 1 tablespoon lime juice
  • 1 teaspoon cumin
  • 1 garlic clove, minced
  • 1 (19 ounce) can kidney beans, rinsed and drained
  • 1 cup salsa
  • 1/2 cup roasted red pepper, drained, blotted dry, and diced
  • 1 (4 ounce) can green chilies, diced
  • 1 teaspoon chili powder
  • 45 inches flour tortillas
  • 3 cups grated mexican blend cheese

Recipe

  • 1 preheat oven to 375°f heat cooking oil in large frying pan and scramble fry chicken for about 5 minutes or until no longer pink.
  • 2 add next 4 ingredients (onion to garlic) and cook for about 5 minutes, stirring often, until onion is softened, then set aside.
