Lapsee

Ingredients

  • Servings: 4
  • 1 cup wheat germ (dalia)
  • 1 1/2 cups sugar or 2 cups jaggery
  • 1 cup ghee
  • 1/2 tablespoon chopped almonds
  • 1/2 tablespoon chopped pistachios
  • 1/2 teaspoon cardamom powder

Recipe

  • 1 warm ghee in a heavy pan.
  • 2 now add wheat germ.
  • 3 stir and cook till germ is golden in colour and aroma exudes.
  • 4 meanwhile melt sugar or jaggery in 1 cup water.
  • 5 keep aside.
  • 6 boil and add remaining water to roasted wheat germ.
  • 7 stir gently now, and cook till the grain of the germ is soft on pressing.
  • 8 add sugar or jaggery, add cardamom and chopped nuts.
  • 9 stir and simmer covered, stirring occasionally.
  • 10 cook till ghee separates along the sides.
  • 11 serve hot.
  • 12 freeze and thaw as required.
  • 13 before serving, take in pan, sprinkle some hot water. heat while stirring, till ghee again separates.
