Roasted New Potatoes With Lemon Horseradish

Ingredients

- 1/4 cup butter
- 1/2 teaspoon salt (or to taste)
- 1/8 teaspoon pepper
- 1 tablespoon prepared horseradish
- 2 teaspoons lemon juice
- 12 red potatoes, unpeeled except for 1/2 inch strip around center of each potato (1-1/2 pounds)
- 1 small lemon, cut into 6 sliced, halved
- 2 tablespoons chopped fresh parsley
Recipe
- 1 heat oven to 350º.
- 2 in 2 quart casserole melt butter in oven 3-4 minutes.
- 3 stir in salt, pepper, horseradish and lemon juice.
- 4 stir in potatoes until well coated.
- 5 cover; bake for 55-65 minutes or until potatoes are fork tender.
- 6 garnish with lemon slices and sprinkle with parsley.
- 7 microwave: in 2 quart casserole melt butter on high 50 to 60 seconds.
- 8 stir in salt, pepper, horseradish and lemon juice.
- 9 stir in potatoes.
- 10 cover; microwave on high, stirring after half the time, until potatoes are fork tender (10-12 minutes).
- 11 let stand 5 minutes.
- 12 garnish with lemon slices and sprinkle with parsley.
