Roasted New Potatoes With Lemon Horseradish

Total Time: 1 hr 20 mins Preparation Time: 15 mins Cook Time: 1 hr 5 mins

Ingredients

  • Servings: 6
  • 1/4 cup butter
  • 1/2 teaspoon salt (or to taste)
  • 1/8 teaspoon pepper
  • 1 tablespoon prepared horseradish
  • 2 teaspoons lemon juice
  • 12 red potatoes, unpeeled except for 1/2 inch strip around center of each potato (1-1/2 pounds)
  • 1 small lemon, cut into 6 sliced, halved
  • 2 tablespoons chopped fresh parsley

Recipe

  • 1 heat oven to 350º.
  • 2 in 2 quart casserole melt butter in oven 3-4 minutes.
  • 3 stir in salt, pepper, horseradish and lemon juice.
  • 4 stir in potatoes until well coated.
  • 5 cover; bake for 55-65 minutes or until potatoes are fork tender.
  • 6 garnish with lemon slices and sprinkle with parsley.
  • 7 microwave: in 2 quart casserole melt butter on high 50 to 60 seconds.
  • 8 stir in salt, pepper, horseradish and lemon juice.
  • 9 stir in potatoes.
  • 10 cover; microwave on high, stirring after half the time, until potatoes are fork tender (10-12 minutes).
  • 11 let stand 5 minutes.
  • 12 garnish with lemon slices and sprinkle with parsley.
