Pan Roasted Green Beans Tossed With Garlic, Lemon And Mint

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • 3 tablespoons olive oil
  • 1 lb green beans, trimmed, cut in half and steamed for 5 minutes
  • 1/8 teaspoon red pepper flakes
  • 2 tablespoons garlic, chopped
  • 1/4 teaspoon kosher salt
  • fresh ground black pepper
  • 2 tablespoons fresh mint, chopped
  • 3 tablespoons lemon juice
  • 1 lemon, zested

Recipe

  • 1 heat the olive oil in a large, nonstick skillet over medium high heat.
  • 2 add the steamed green beans and red pepper flakes and cook until just starting to turn brown, about 7 minutes, stirring or tossing often.
  • 3 reduce the heat to medium low and stir in the garlic, salt and pepper.
  • 4 cook for two minutes and stir in the mint, lemon juice and zest.
  • 5 cook for one minute, stirring to combine all the ingredients and remove from the heat.
  • 6 serve warm or at room temperature.
