Pan Roasted Chicken

Ingredients
- Servings: 4
- 2 teaspoons olive oil
- 1 clove garlic, peeled
- 4 boneless skinless chicken breast halves
- 1/4 teaspoon paprika
- 1/8 teaspoon ground black pepper
- 3 cups carrots, 1 inch pieces
- 2 cups turnips, 1 inch pieces
- 1/2 cup chicken broth
- 2 teaspoons dried oregano
Recipe
- 1 heat oil over medium/low heat.
- 2 add garlic and saute for 3 minutes.
- 3 remove garlic and discard.
- 4 increase heat to medium/high.
- 5 sprinkle chicken with paprika and pepper.
- 6 saute until golden.
- 7 set aside.
- 8 add carrot, turnip, broth and oregano to skillet.
- 9 cook for 5 minutes.
- 10 put chicken and any accumulated juices from the plate in roaster along with vegetables.
- 11 cover and bake until chicken is no longer pink in center, about 20 to 25 minutes.
