Pan Roasted Chicken

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 2 teaspoons olive oil
  • 1 clove garlic, peeled
  • 4 boneless skinless chicken breast halves
  • 1/4 teaspoon paprika
  • 1/8 teaspoon ground black pepper
  • 3 cups carrots, 1 inch pieces
  • 2 cups turnips, 1 inch pieces
  • 1/2 cup chicken broth
  • 2 teaspoons dried oregano

Recipe

  • 1 heat oil over medium/low heat.
  • 2 add garlic and saute for 3 minutes.
  • 3 remove garlic and discard.
  • 4 increase heat to medium/high.
  • 5 sprinkle chicken with paprika and pepper.
  • 6 saute until golden.
  • 7 set aside.
  • 8 add carrot, turnip, broth and oregano to skillet.
  • 9 cook for 5 minutes.
  • 10 put chicken and any accumulated juices from the plate in roaster along with vegetables.
  • 11 cover and bake until chicken is no longer pink in center, about 20 to 25 minutes.
