Jambalaya

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 1 lb chicken breast (cut in strips)
  • 1 lb ground sausage
  • 2 medium onions
  • 3 celery ribs
  • 1/2 cup chopped roasted red pepper
  • 8 pealed and chopped garlic cloves
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh sweet basil
  • 1 tablespoon chopped fresh oregano
  • 1 tablespoon chopped fresh flat leaf parsley
  • 1 teaspoon salt
  • 1 teaspoon cayenne pepper
  • 1 teaspoon black pepper
  • 1 1/2 cups long grain rice
  • 3 cups chicken stock
  • 2 tablespoons olive oil

Recipe

  • 1 1. brown the sausage and chicken in the oil.
  • 2 2. add the remaining ingredients and simmer on low until most of the liquid is absorbed.
  • 3 3. serve!
