Ingredients

- 10 large red chilies, half remove the seeds removed and cut into six
- 3 garlic cloves, peeled
- 1/2 lemon, juiced
- 2 tablespoons red wine vinegar
- 1 teaspoon cumin seed, pan roasted & then ground
- 3 tablespoons olive oil, extra virgin
- 1/4 teaspoon sea salt
Recipe
- 1 blend (or pound with mortar and pestle) the chillies, garlic, lemon juice and vinegar together to a thick paste.
- 2 fold in the cumin, oil and salt.
- 3 use straight away or store in fridge for up to 1 week in an air tight container and use as required.
