Mushroom Melts

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 tablespoons mayonnaise
  • 1/2 lemon, juice of
  • 1/4 cup roasted red pepper, finely chopped
  • 1 garlic clove
  • 4 mushroom caps, portobello large-stem removed
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon italian seasoning
  • salt
  • pepper
  • 1/2 cup mozzarella cheese, shredded
  • 4 slices red onions
  • 4 buns, whole-grain
  • 1 cup arugula or 1 cup other mixed greens

Recipe

  • 1 heat a grill or grill pan. combine the mayo, lemon juice, red peppers and garlic. (puree it, if you like it smooth).
  • 2 rub the mushrooms with the olive oil, vinegar, italian seasoning and s&p. grill, top side down for 2-3 minutes, flip and immediately add the cheese. cook for another 2-3 minutes, until the cheese is melted and the mushroom is fully cooked. while the mushrooms are cooking,grill the onions until browned and toast the buns.
  • 3 top each bun with greens, grilled onions, mushrooms, and the red pepper mayo.
