Roasted Garlic Soybean Hummus

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • 3 cloves garlic
  • 1 1/2 cups cooked soybeans
  • 2 tablespoons roasted sesame tahini
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1/2 cup fresh parsley
  • salt
  • 1 -4 tablespoon water or 1 -4 tablespoon vegetable broth

Recipe

  • 1 preheat broiler.
  • 2 broil garlic cloves for 5 to 10 minutes, or until they just begin to brown and can be pierced easily with a fork.
  • 3 in a food processor, combine garlic with soybeans, tahini, olive oil, lemon juice and parsley.
  • 4 blend until smooth, adding salt to taste and water or broth to reach desired consistency.
