Roasted Garlic Soybean Hummus

Ingredients
- 3 cloves garlic
- 1 1/2 cups cooked soybeans
- 2 tablespoons roasted sesame tahini
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1/2 cup fresh parsley
- salt
- 1 -4 tablespoon water or 1 -4 tablespoon vegetable broth
Recipe
- 1 preheat broiler.
- 2 broil garlic cloves for 5 to 10 minutes, or until they just begin to brown and can be pierced easily with a fork.
- 3 in a food processor, combine garlic with soybeans, tahini, olive oil, lemon juice and parsley.
- 4 blend until smooth, adding salt to taste and water or broth to reach desired consistency.
