Parmesan-roasted Acorn Squash

Ingredients
- Servings: 4
- 2 lbs acorn squash, halved, seeded and sliced 3/4 inch thick (can also use delicata squash)
- 2 tablespoons olive oil
- 8 sprigs fresh thyme
- kosher salt
- fresh ground black pepper
- 1/4 cup grated parmesan cheese (1 ounce)
Recipe
- 1 heat oven to 400°f
- 2 on a rimmed baking sheet, toss the squash with the oil, thyme, 1/2 tsp salt, and 1/4 tsp pepper.
- 3 sprinkle with the parmesan.
- 4 roast the squash until golden brown and tender, 25-30 minutes.
