Parmesan-roasted Acorn Squash

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 lbs acorn squash, halved, seeded and sliced 3/4 inch thick (can also use delicata squash)
  • 2 tablespoons olive oil
  • 8 sprigs fresh thyme
  • kosher salt
  • fresh ground black pepper
  • 1/4 cup grated parmesan cheese (1 ounce)

Recipe

  • 1 heat oven to 400°f
  • 2 on a rimmed baking sheet, toss the squash with the oil, thyme, 1/2 tsp salt, and 1/4 tsp pepper.
  • 3 sprinkle with the parmesan.
  • 4 roast the squash until golden brown and tender, 25-30 minutes.
