- 4 cups fresh spinach
- 2 cups peas, blanched
- 1 cup roasted pine nuts
- 1/2 cup pesto sauce (or to taste)
Recipe
- 1 bake pine nuts at 350 for 5 to 10 minutes or until golden. allow to cool.
- 2 blanch peas in boiling water for 1 to 2 minutes and then rinse under cold water.
- 3 combine spinach, peas, pine nuts and pesto. great served cold or hot.
