Peas And Pesto Salad

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 4 cups fresh spinach
  • 2 cups peas, blanched
  • 1 cup roasted pine nuts
  • 1/2 cup pesto sauce (or to taste)

Recipe

  • 1 bake pine nuts at 350 for 5 to 10 minutes or until golden. allow to cool.
  • 2 blanch peas in boiling water for 1 to 2 minutes and then rinse under cold water.
  • 3 combine spinach, peas, pine nuts and pesto. great served cold or hot.
