Greens, Beans & Bacon Soup

Total Time: 39 mins Preparation Time: 3 mins Cook Time: 36 mins

Ingredients

  • 3 slices low sodium bacon, cut crosswise into 1/4 inch pieces
  • 3 cups packed chopped kale
  • 2 1/4 cups water
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 (14 1/2 ounce) can roasted garlic chicken broth
  • 1 cup chopped onion
  • 1/4 teaspoon black pepper
  • hot sauce (optional)

Recipe

  • 1 cook bacon in a large saucepan over medium-high heat 8 minutes or until crisp.
  • 2 reserve 2 teaspoons drippings in the pan and discard the rest.
  • 3 add kale and next 5 ingredients to bacon and drippings in pan.
  • 4 stir in hot sauce, if desired.
  • 5 cover and bring to a boil over high heat.
  • 6 reduce heat and simmer 25 minutes.
  • 7 serve immediately.
