Roasted Asparagus Shiitake Salad

Ingredients

- 4 cloves garlic, minced
- 1 lb asparagus, cut into 2 inch pieces
- salt
- pepper
- 1/4 lb shiitake mushroom caps
- 1 small red onion, sliced
- 2/3 cup cherry tomatoes, halved
- 1 red pepper, roasted and sliced
- 3 tablespoons red wine vinegar
- 1/3 cup olive oil, plus extra for drizzling on asparagus
Recipe
- 1 preheat oven to 350.
- 2 toss garlic with asparagus and shiitakes and place on a roasting pan, roast for 5 minutes.
- 3 remove to a bowl and cool completely.
- 4 add onion, peppers, tomatoes.
- 5 whisk together vinegar, olive oil, salt and pepper, drizzle over salad, toss, serve.
