Roasted Asparagus Shiitake Salad

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 4 cloves garlic, minced
  • 1 lb asparagus, cut into 2 inch pieces
  • salt
  • pepper
  • 1/4 lb shiitake mushroom caps
  • 1 small red onion, sliced
  • 2/3 cup cherry tomatoes, halved
  • 1 red pepper, roasted and sliced
  • 3 tablespoons red wine vinegar
  • 1/3 cup olive oil, plus extra for drizzling on asparagus

Recipe

  • 1 preheat oven to 350.
  • 2 toss garlic with asparagus and shiitakes and place on a roasting pan, roast for 5 minutes.
  • 3 remove to a bowl and cool completely.
  • 4 add onion, peppers, tomatoes.
  • 5 whisk together vinegar, olive oil, salt and pepper, drizzle over salad, toss, serve.
