Roasted Asparagus, Onions And Mushrooms

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1 1/2 lbs asparagus, trimmed
  • 1 lb mushroom, thickly sliced
  • 1 medium red onion, sliced
  • 2 tablespoons olive oil
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • garlic powder, to taste
  • shredded parmesan cheese, to taste

Recipe

  • 1 heat oven to 425°f.
  • 2 line a 10 x 15 inch rimmed baking sheet with foil.
  • 3 place vegetables in pan and sprinkle with olive oil and toss until covered evenly.
  • 4 sprinkle with salt, pepper and garlic powder.
  • 5 roast 10 minutes, stir, sprinkle with parmesan cheese and roast an additional 10 to 15 minutes until vegetables are slightly charred and tender.
