Roast Potato Salad

Ingredients
- Servings: 4
- 800 g roasted potatoes, heat through till warm
- 3 slices middle bacon, diced
- 3 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon dijon mustard
- 1 teaspoon whole grain mustard
- 1/2 teaspoon sugar
- 3 cups baby spinach leaves
Recipe
- 1 fry bacon till crisp.
- 2 in a screw top jar mix olive oil, vinegar, mustards and sugar.
- 3 arrange spinach on a platter, top with potatoes.
- 4 sprinkle with bacon.
- 5 drizzle with dress.
